Cinnamon-Vanilla Pancakes

We are so excited to share this recipe! I mean, who does not enjoy a fluffy, warm and sweet pancake!

I remember the morning clearly, I wanted nothing more than to be able to make pancakes for my family that would be very similar to the pancakes served up diner style. I wanted them to be soft with yet a slightly crunchy outside with a hint of vanilla and sweetness….
For awhile, this was just something I dreamt of doing as I was convinced with our food allergies, we were banished to a life of gummy, flat, and not so attractive pancakes (enter sad face followed by a small violin here!) ;)


It was almost as if something awoke inside my mind and heart with a strong determination that morning, to serve up the pancakes I wanted that day. I pulled together ingredients I have come to know and love in our world of food restrictions. I have found applesauce to be a wonderful egg replacer. Another element that is important is getting the structure that normally popular ingredients provide but are major allergens that have to be avoided. A product made very similar to gelatin, referred to as collagen peptides, gives a good base for the structure of the pancake. I just plugged away at meddling with different measurements of each of the ingredients that made it to my counter.

Then, the big moment. Adding the batter one by one to the skillet, being able to not only have a pancake that could flip instead of sticking like super glue to the pan, but having the caramel brown coloring on the outside of the pancake. Taking out that first pancake, biting into it and for once not having a gummy texture to taste. I felt like I just climbed Mt. IHOP and won the coveted "I DID IT" feeling.

I know there are plenty of good pancake recipes out there that stay away from the top food allergens but I have to admit, these take the {pan} cake! :)

Cinnamon-Vanilla Pancake

Makes 10-12 small/med size pancakes

Ingredients
  • 1 cup brown rice flour
  • 1/2 cup arrowroot
  • 2 tsp baking powder
  • 2 scoops Vital Proteins Collagen Peptides 
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/3 cup coconut oil
  • 1/3 cup applesauce
  • 2 tbsp maple syrup
  • 2 tsp vanilla
  • 3/4 cup-1 cup water or non-dairy milk*
  • 1 tsp coconut oil, for greasing the skillet
Directions​
  1. Whisk together the brown rice flour, arrowroot powder, baking powder, collagen peptides, salt and cinnamon in a bowl.
  2. Add the coconut oil, applesauce, maple syrup, and vanilla and begin mixing.
  3. Slowly pour the water or milk into the mixture, making sure the liquid is not ice cold so the coconut oil does not harden. *At times, I find this recipe works best by adding the LEAST amount of liquid first, adding more if batter is too thick.
  4. Once completely mixed together, add a ladle full of batter to your pre-heated cast iron skillet (or non-toxic non stick skillet) the size of an orange (for medium size pancakes).
  5. Cook for 2-3 minutes each side, flipping as soon as you see bubbles pop.
  6. Remove pancakes and place on a cooling rack while you continue cooking the rest of the pancakes.
  7. Add your favorite maple syrup or fruit preserves as a topping and enjoy!
